SWEET POTATOES, you are so sweet!

Sweet potato&Raisin scones
Make 15
150g sweet potato (abt. a half)
230g all-purpose flour
4 small table spoons baking powder
50g brown sugar
pinch of salt
60g unsalted margarine
1 egg
60cc milk
raisin as much as you like

①Cube the sweet potato (5mm) and put them into a bowl of water. Then strain off the water from them and microwave them for 3 minutes.
Preheat the oven to 180℃
②Shift the flour and baking powder. Add the sugar and salt.
③Put margarine into the flour mixture and mix it until it crumbles.
④Add the sweet potato and raisins and mix in throughly.
⑤In the other bowl, mix the egg and milk. Add it to the flour mixture and mix to a firm dough.
⑥Roll out the dough on a floured surface and cut out using a 4-5cm cup (glass).
⑦Transfer to the prepared baking sheets and bake for 15-20 minutes.
